WHICH FISH ARE IN SEASON IN DIFFERENT TIMES OF YEAR?
Since you cannot find every fish in any season, their fishing season and the times in which they are delicious vary to a significant degree. Here is a short list of fishes that you can find in season by months.

January
Mackerel, blue fish, bonito, and horse mackerel protect their good taste. The grey mullet and anchovy are completely oily. Little blue fish, large blue fish and whiting can be easily found in the markets. Mullet and red gurnard are caught abundantly. Red mullet, sword fish, and red sea bream are caught in low quantities.

February
The turbot season that starts in February continues until the end of May. Mullet is found abundantly. Mackerel, bluefish and bonito start to lose oil. Sand smelt and grey mullet can be eaten with a delicious taste.

March
It is most delicious time of the grey mullet, sea bass and turbot. The mackerel has started to dry, it can be fried in pan or served as a cold dish with oil and onion. The sand smelt starts to be caught abundantly. Since bluefish and bonito have lost their oils, they are available for frying pan or serving as a cold dish with oil and onion. Large blue fish can be grilled. Mullet is delicious.

April
It is the month in which turbot is found most abundantly. Red sea bream, sea bass, swordfish and red gurnard start to be caught abundantly. Therefore, they are cheaper compared to the other months. However, the swordfish is not very delicious. The sand smelt, grey mullet, whiting, mullet and red mullet are caught in high quantities. Brown meagre is seen in this month.

May
Sea bass, red mullet, sole, mullet, swordfish and scorpion fish are eaten with a delicious taste. Since they are caught abundantly, it is possible to see them in the markets everyday. The mackerel, large bonito, bonito, anchovy and horse mackerel have lost their oils. But grey mullet is delicious.

June
Fish is caught in low quantities in June. Ground fish are found scattered around in a disorganized manner since they have laid their eggs. Therefore, it is an unproductive month in respect of fishery. Mullet, red mullet, red sea bream, sea bass and brown meagre are found; but they are expensive.

July
Sardine which becomes to be in season protects its delicious taste until the middle of October; horse mackerel and mackerel are available for frying and boiling. Mullet and red mullet are delicious; but grey mullet lacks a delicious taste. 

August
Baby bonito season is opened. Its length is as much as that of bonito or it is a little larger than it. It is the most delicious time of sardines. The swordfish is so delicious in August that you can’t get enough of it; sea bream has found its taste. Grey mullet is not recommended.

September
Sardines and swordfish are delicious. The bonito becomes larger and is available for any kind of fishing methods. Blue fish is expensive in this month; horse mackerel and red gurnard are caught abundantly.

October
It is the season in which the migrating species that fed in the Black Sea start to migrate to the Sea of Marmora. Therefore, fish is caught abundantly. The mackerel is newly seen out of its season. Blue fish has gained its full taste; and horse mackerel has become oily. Bonito is caught abundantly. It is possible to buy cheaply the fish species such as mullet, red mullet, swordfish, sea bass, red sea bream, sardine, brown meagre, large bonito, sea bream, etc.

November
It is the best time of mackerel. The flow of large bonito has started. It is the month in which plaice is most delicious. The fish species that are found abundantly and delicious in October can also be found in November.

December
Since mackerel, blue fish, bonito and large bonito are oily enough, they can be cooked with any method. Anchovy is delicious. Mullet is found abundantly.
